Skinny Girl Vojitos

Tired of your normal drink.

Looking for something new.

Light, refreshing, & crisp.

                Skinny Girl Vojito

Ingredients: 

1. Skinny Girl Vodka
2. Stevia or Agave Nector
3. Low sodium Club Soda
4. Mint
5. Limes

How to make: 

1. Add sugar packet to cup
2. Pour amount of Skinny Girl Vodka needed (could make a little strong if you wanted)
3. Cut lime in half and squeeze juice out.
4. Add mint leaves (do not add stems to drink)
5. Top with your club soda
6. Add desired amount of ice
7. Pour into a shaker & shake it up. Pour back into the glass & enjoy!
 
**PS make sure you grab a cute bartender who will make it for you...BONUS!**

PeanutButter Cheesecake Shakeology


Ever have one of those desserts that was just to DIE for??

This recipe has been floating around and I decided to give it a shot since I'm always mixing mine the same way. It is way TOO delish to not share.

Ingredients
* 1 scoop of Chocolate Shakeology (I use vegan chocolate)
* 8 oz of almond milk
* 2 tbsp of Pb2 (powder you can find at GNC & I know hear target)
* 1 tbsp of fat free/sugar free cheesecake pudding
* ice as desired             

BLEND & SERVE IN A FANCY GLASS!
HAVE FUN WITH IT!!

Taco Casserole


Everyone likes a little Mexican dish in their life..right? Mexican food is my one downfall, my true weakness...so anytime I can spice it up and make it a little clean I am all for that! Something totally unique and different and I never would have thought to make it.

Ingredients:
-1 lb of lean ground turkey
-1 small onion, chopped
-1 packet of taco seasoning
-8 oz jar of taco sauce
-2 tomatoes, sliced
-Iceberg lettace, chopped
-Plain Greek Yogurt (in replace of sour cream)
-Low fat cheddar cheese (optional)
-Whol Grain Tortilla Shells (hard)

Directions:
-Preheat the oven to 350 degrees and bake for 15 minutes.
-Brown ground turkey & onion in pan over medium heat.
-Drain the liquid and add taco seasoning with 1/4 cup of water.
-Stir until mixed well. Add the taco sauce.
-Layer baking dish with crunched up taco shells.
-Then put a layer of ground meat, thin layer of greek yogurt, tiny bit of cheddar cheese, then layer with shells, ground meat, greek yogurt and cheddar cheese on top.
-Top with lettace, tomatoes, and whatever other toppings you are adding.

Brownie Kabobs

Beloved Pinterest how I am ever so grateful for you. Ever have a place that you just always go to & maybe you just like to browse? Pinterest is that for me, it is truly like a gold mine!

I was never really a cooker/baker, but I have been going there just to get some new ideas when I stumbled upon these.....

Brownie Kabobs!

What you need:

-brownies
-melted chocolate chips
-sprinkles (if you want to make them pretty)
-toothpicks or cake pop sticks 
-wax paper
-cookie tray

Brownies: 
* 1 (16 oz) almond butter
* 4 egg whites
* 1 cup of honey
* 1 tablespoon vanilla
* 1/2 cup unsweetened cocoa powder
* 1 teaspoon baking soda
* 1 cup grain sweetened chocolate chips

Directions: 
* Preheat oven to 325 degrees
* add each ingredient, in the order listed to a large mixing bowl, one at a time. Whisk each ingredient completely before adding the next. 
* pour into a baking pan & bake for 35-40 minutes. 

You will pretty much make these like cake pops. If your brownies turn out dry & crumbly , you can add a little frosting until "mushy" mixture til it's easy to form the balls. 

Now onto the fun part!!!!

1. Take small portions of your baked brownie & 'squish' them into small ball shapes.
2. Put 2 balls side-by-side and gently insert a toothpick through them. 
*may break: once toothpick is through just shape them again. 

3. Melt chocolate slowly. Once melted pour chocolate on brownie kabobs.

4. Place the kabobs on a cookie tray, lined with wax paper.
5. Throw sprinkles on them
6. Place in fridge to allow chocolate to harden.

You can see mine are not on toothpicks/cake pop sticks because we were having too much trouble making them stick and hold. Next time I think I am going to try a different way to make my brownies.

Goodbye Detox

Another phase down.

 There is ONE STINKIN'  week left. 

I'm not complaining here, but I so can not wait! 

I think I have been counting down the days since day two...boooo. But I know I needed this because I put my body through hell & high water weeks ago. 

Do I regret signing up myself & the bf? NO, but I'm sure Eric does. 

Every time I think of quitting, I stop to think why I started what was my reasoning. Then I think of my challengers & followers. What would they think if I quit and they get me going. And then I tell myself 7 more days, just 7 more days.


Ultimate Reset Update


I feel much better than I did on day 11. I really was getting myself worked up because of how I felt when I did this one year ago. It's difficult when you remember those things because you expect to feel the same way. BUT it does point out that 1. everyone is different : so something I am experiencing you may not. 2. Every time you do the reset it could be different. It all depends on how you treat your body and i'm pretty sure this go around I did a bang up job eating crappy.

So, last night we went out to watch the Pens game...that was difficult. The temptations of pizza, drinks,  edible arrangements, outside spring/summer fun. I will say I did great 100% on track!!! I took my supplements before we left & packed my dinner to eat there, grabbed my gallon of water and we were on the road.

Another struggle today....prepping for Mother's Day. The cooking and the baking...the house smelling so good. I am a little jealous that I won't get to try my Molten Chocolate Cake (recipe to come later) & my Meatball Casserole (recipe posted soon).

Is This Whole Beachbody Coaching Thing For Me?

Waking up, getting ready for your 9-5 job (maybe disliking your job), sitting in rush hour traffic, exhausted, all just to do it all over again the next day. Why would you want to be fitting in with the crowd when you were born to stand out and SHINE!

Double Digits

Can you believe it?

We've hit the double digit mark on the Ultimate Reset.

We are on day 11 and just counting down the days. 

Few things:

- we started the Detox phase. No animal based food. And this delish drink...NOT.

It literally looks like brown water, but I promise it's not. I don't mind the taste honestly, BUT it's grainy and no matter how hard you shake it, it still settles. So drink it fast. 

- I'm getting frustrated. And the reason for that, because I did this last year and I know how I felt. I had way more energy, but defiantly feel better then before starting. I feel bloated right now, I don't feel "lighter" like I did in week one. But I'm basing that off of it's that TOTM. I guess I thought I would feel the same, but I just same to trust the process. 

- I'm a simple girl. I tried to get all fancy the first week and eat a variety of foods. But honestly if I found something I LOVED I have been sticking with it.

- Sleep = deep sleep. I used to wake up  to everything and not be able to fall back asleep for a half an hour. Now I fall asleep  as soon as my head hits the pillow & if I wake up it's to move, but I go right back to sleep. 

- some days I feel FULL, others I need more. You don't go starving on the reset but, this time around there are days I feel hungry still. 

- sleepy time tea. Nothing special. It's just my comfort right before bed. It puts me in a calming state of mind. 

I can't say this experience a second time around has been awful...just not what I excepted.

Fitness Motivation

Do you know as a beachbody coach for years I struggled with finding my motivation to stick to a diet, weight loss plan, pills, gym membership, & DVDs (which are now collecting dust.) we all struggle and it's something very hard to overcome.

Yes I needed to lose weight.
Yes I needed to get in shape. 
Yes I wanted to eat healthy.
Yes I wanted my stomach pains to stop.

but HOW......

 
If you don't find your "why" behind it all. If you "why" isn't strong enough to make you get teary-eyed or excite you forget it. Start there, really sit down and think about why you want to (insert your goals here). Your why is what is going to push you each and every single day. Make you realize that you can do this, and you are good enough.


So how do you find the motivation?

Do you see this picture, can you even believe that is me? Because honestly, I don't believe it and I hate looking at it still to this day. But I do because it is my daily reminder of how far I have come, how I felt, and it makes me work harder so I don't fall back in that same trap. But before Beachbody... I was a lost cause. I was so unhappy with myself & I was beginning to isolate from everything around me. If I had to get dressed up or get out of sweat pants, I tried to find an excuse for me not to leave the house.. SAD right? It was one weekend when myself & some college friends went up to visit UPJ, because our sorority was celebrating 25 years. We were all sitting around Friday Night waiting to go out talking about how summer was coming up, when someone asked a friend what she has been doing because she looked great. And what she said, she was in a Beachbody Challenge for ASA. It peeked my interest and I began asking her questions & if I could join, because I was at a point I tried everything and just could not stick to anything at all. I didn't even think twice to sign up and join. I'm one of those people if you tell me something, I will try it. I won't do research or anything. Of course I was weary about it , but I didn't let that show. I had to do something, try this for the last time.

So why did I join?

Every program comes with a nutrition guide, it allows you to get ideas for your week if you choose to use them. You get a schedule to follow so no need to look confused when you start. It is laid out right in front of you, all you need to do is pop in the DVD. Can you say money saver!! Think about it, you have had a gym membership or personal trainer (how much are you spending each year). Personal trainer you would defiantly show up everyday, but the gym with no one to push you..you may not show up there could be days, weeks, months you just don't show up & that money is gone. With Beachbody you pay for your challenge pack right when you begin and that is it! It's a lifestyle change; not a fad diet. Beachbody is not all about weight loss, they promote healthy living, and want you to succeed.  The #1 reason why I joined was the support. There is an unbelievable support system through the whole community, from your coach, fellow challengers, the community on the site. It never ends, if you are struggling someone is there to pick you up.

What's this Beachbody Challenge?

My job as your coach is to work with you one on one, helping you to achieve your fitness goals. Every month I ran closed online accountability groups. You decide on a fitness program, I can help you narrow them down if you would like & tell you what I think based on your goals you are looking to achieve but at the end, it is your call. I will plug in daily to give you motivation, support, recipes, tips, and anything you would like to go over. You will take before & after's (yes I know something we all dread) but it is something you will want to do, because you want a comparison from beginning to the end. YOU MUST CHECK IN DAILY! This is something that tends to get pushed off and people think just because they read the post they are participating. It only takes 5 minutes makes to stop in and tell us how your day is going, what went well, what you are struggling with, etc. Did you get your workout in , what your Shakeology recipe was, your meals for the day. 

YOU JUST HAVE TO COMMIT AND YOU WILL GET THE RESULTS!!!

I have found that after joining the Beachbody Challenge, the support and accountability is what was missing for me to succeed on a daily basis. Every day I would wake up excited to workout, make a new shakeology recipe, and check in with my challenge group. WHY? Because I did not want to fail & I know my fellow challengers were pushing play everyday so why shouldn't I? You can have the workouts, you can eat healthy, but if you don't have the support to lift you up when you are struggling will you continue? I know I didn't...if I had a bad day I wouldn't workout. Or if  wasn't seeing results I would get down on myself and give up. This worked for me and why wouldn't I share it with everyone else if it could help?
