Queso Dip



You know there is always that one food you just can't resist. The one food that is just your weakness, and of course is just not even nearly healthy. Mexican food is my go to food. I don't know what it is about it, but I love it. Queso dip is probably a top favorite for a lot of people, but how in the world do you make it healthy?? It isn't of course as gooey as we all would like it, but it can sure be in replace of the real thing. Check it out!! If you are a Mexican food lover like me, you will love this!!

Ingredients:
  • ½ cup plain greek yogurt
  • 2 cup mozzarella (part-skim), shredded
  • ½ cup cream cheese (low fat)
  • 1 red bell pepper
  • 1 jalapeño
  • ¼ cup white onions, diced
  • ¼ tsp. sea salt
  • ¼ tsp. cayenne pepper

  • Directions:
    1. Preheat oven to 350 °F
    2. Place the bell pepper and jalapeño in the oven for 15-20 minutes (until charred); turn the peppers over once.
    3. Combine Greek yogurt, mozzarella, cream cheese, sea salt, and cayenne pepper in a food processor or blender. Blend until smooth.
    4. Over medium heat, cook the onions until the outsides are brown.
    5. Combine the onions to the cheese mixture.
    6. Remove the peppers from the oven, place in a bowl, and cover with saran wrap for 15 minutes.
    7. Remove the peppers from the bowl, remove the skins, and cut into slices.
    8. Add the peppers to the cheese mixture and place the complete mixture into an 8×8” casserole dish.
    9. Place dish in the oven for 10-15 minutes (keep an eye on it; you will know when it is ready).
