Chicken Kabobs

Yum. Delish. Simple.

Ingredients:

-5 oz- boneless, skinless chicken breast, cut into 1 in. cubes
-1 tsp. Olive Oil
-2 TBS. Lemon Juice
-1/4 C. Red Onion. Thinly sliced
-1 tsp. Paprika
-1 tsp. Mrs. Dash
-1 C. Bell Peppers cut into 1 in. Cubes  
-3 Wooden or Metal Kabob Sticks


Prep:

-Marinate the chicken in the olive oil, lemon juice, red onions and paprika for 30 mins.
-Then season the chicken w/ Mrs. Dash; skewer chicken cubes w/the bell peppers onto the kabob sticks.
-Grill or broil until cooked through, about 8 mins. 
-Bake at 375 degrees for 12-5 mins, or until soft.

Easy Peasy Way to Boil Hard Boil Eggs

I know you are probably thinking is this a serious blog post? And let me just tell you .... YES IT IS!

Every time I try to boil eggs in water, I personally feel like I have them in there long enough. BUT it never fails, when I go to eat one, it still needs cooked. So I stopped trying. One day I was on Pinterest (of course) and I thought to myself, if I struggle someone else has to be too. So I searched easy way to boil eggs? 

And TA DA!!!! This place is a gold mine. 

                                 


Makes my life a whole heck of a lot easier. 

Directions: 

- preheat oven to 350 degrees

- place as many eggs as you desire in muffin/cupcake pan

- set timer to 30 minutes

- go back to your to-do list

When timer is done :

- get a bowl and fill with cold water

- place eggs in water 
(Tip:this makes the shell easier to peel later)

- put eggs in container and store in fridge



Saves me the hassle and plus I don't have to throw away eggs !

Crock Pot Mexican Dinner


Busy days at work right? Who wants to come home and prep dinner. I threw all these ingredients in the crock pot this morning before I left for work and just like that it was done when I came home!!

                                          Crock Pot Dinners

Ingredients:
1. 4 boneless, skinless chicken breasts
2. 1 cup black beans
3. 1 cup corn kernels (fresh or frozen)
4. 1 small jar salsa
5. 1 Tbsp cumin
6. 1 Tbsp chili powder
7. 2 cups cooked brown rice


Directions:

**Throw all your ingredients: chicken breast, beans, corn, salsa, cumin and chili powder. Mix and cook on low 8 to 10 hours. Serve with cooked brown rice.
