Cumin Baked Chicken

I always looking for new spices to add or different ways to cook chicken. This recipe is in the Insanity Max 30 and it is something I am trying for the week.



Ingredients -

- 4 (7 oz) chicken breasts, boneless, skinless

- 4 tsp. olive oil

- 1 tsp. ground cumin

Directions -

1. Preheat the oven to 375 degrees.

2. Place chicken in the ovenproof dish.

3. Drizzle with oil. Season with cumin.

4. Bake for 15-20 minutes, or until chicken is no longer pink in the middle and juices run clear.

Pinto Beans and Rice

Simple but easy. Does not take long to prep and cook. And I have to say this was my comfort food while on the Ultimate Reset.

Ingredients:

-1/2 cup  canned pinto beans, with liquird
-1 cup cooked brown rice
-1 tsp.  extra-virgin olive oil
-1 tsp. ground smoked paprika
-1 dash of ground cumin
-1/4 tsp. ground coriander
-1 tsp. Bragg Liquid Aminos
-Himalayan salt (to taste; optional)


Directions:

Heat beans in medium saucepan over medium heat for 3-5 minutes, or until hot. Drain. Add oil, paprika, cumin, coriander, bragg liquid aminos, and salt if desired; mix well. Gently fold beans into warm cooked rice.
